There is no reliable evidence that Kölsch causes worse headaches than other beers. The amount of alcohol consumed is the main factor in how you feel the next morning, while drinking pace and individual responses also play a part.

A sociable evening in a traditional Cologne brewhouse, known locally as a Brauhaus, has its own rhythm. The Köbes, the traditional server, moves between the tables with a Kranz filled with glasses of freshly tapped Kölsch. A slim glass is placed on the table, and another line is added to the beer coaster. When the glass is empty, a fresh one often follows without being ordered. That is simply how Kölsch service works in many Cologne brewhouses.

It is also why visitors sometimes ask whether Kölsch affects them differently from other beers.

What Role Does Fermentation Play?

During fermentation, yeast produces more than ethanol and carbon dioxide. Small amounts of compounds known as higher alcohols also form naturally, and some help shape a beer’s aroma and flavour.

Kölsch is top-fermented, while Pilsner and Helles are bottom-fermented. That difference is part of what gives each style its own character. It does not prove that Kölsch contains higher levels of these alcohols or that it causes a worse hangover. The yeast strain, recipe and fermentation conditions all matter.

What Does the Beer Coaster Tell You?

Kölsch traditionally arrives in a slim 0.2-litre glass known as a Stange. Because the serving is small, it is normally enjoyed while still fresh and cool. Each new glass earns another line on the beer coaster.

The coaster quietly keeps count while the conversation carries on. It is one of those small details that make Cologne’s brewhouse culture so distinctive.

Water between glasses gives you a pause and quenches your thirst. Food is part of the experience too. Halver Hahn, Himmel un Ääd and other Rhineland classics belong at the table just as naturally as a fresh Kölsch.

Once you have had enough, place the beer coaster on top of the glass. The Köbes will understand the signal.
